This five minute creamy, refreshing and relaxing Baileys ice cream coffee will be your favorite beverage this summer.
A joyful summer afternoon is not possible without a cold refreshing drink. It can be a can of ice cold beer, a sweet smoothie, soda, iced tea or iced coffee. I am always in search of new drinks every summer. Having tried kiwi melon smoothie and blackberry watermelon smoothie and cold chocolate milk earlier this summer, I wanted to make a slightly alcoholic beverage, and came up with this Baileys ice cream coffee.
Actually the idea came from a comment on my spicy coconut Baileys coffee recipe on Instagram. “Can we have this cold and with a lot of ice? YUM!” The comment came from Zerrin, the veteran blogger behind Giverecipe, one of my favorite foodblogs. How could I ignore such a precious comment? I hope she likes this iced version.
I prepared two versions of this coffee. The first version does not contain Baileys and is for the kids. But if you want your kids to sleep deeper and longer, you don’t have to make this version. Ha ha! Just kidding. The second one is for the adults. The recipe below makes just one glass. Preparing the coffee for multiple glasses and keeping in the refrigerator may be a good idea because in my case everybody asked for the second glass.
Deciding on the right Baileys for you is another point. I used coffee flavored Baileys. You can use your own favorite, and accordingly you can use your favorite ice cream as well. Mint chocolate Baileys and mint chip ice cream may result in a fresher experience. For a stronger and more relaxing Baileys ice cream coffee experience, you can double the Baileys for each glass. You know alcohol acts stronger in sweet beverages, so doubling the amount will make you really fine and relaxed. Don’t forget to be careful about responsible drinking!

Ingredients
- 200 ml milk
- 50 ml Baileys
- 1 tbsp instant coffee
- ½ tbsp sugar
- 1 scoop cocoa ice cream
- 1 scoop vanilla ice cream
- Chocolate sauce
- Ice
- Sprinkles
Instructions
- In a food processor mix milk, Baileys, instant coffee, sugar, and cocoa ice cream until smooth
- Drizzle some chocolate sauce inside the glass
- Add ice into the glass
- Pour the mixture
- Top with vanilla ice cream and sprinkles

I feel relaxed just looking at this! Sometimes (okay, a lot of times) you just need a good dose of ice cream. And booze. And what better way to satisfy those needs than boozy ice cream? Totally in love!
