This is the second time I froze popsicles this summer. After tropical blackberry popsicles got a lot of praise from the kids, I started to feel more willing to make ice pops. This time I doubled the amount because I know they will ask for more.
Peach means summer, and summer means peach to me. Most of the fruits are available all year round, but finding peach in winter may be difficult and very expensive. That irresistible smell and taste of peach reminds me of my childhood all the time. So I decided to include peach into these berrylicious popsicles. For the red layer I used strawberry, and for the dark purple layer some blackberry.
This time I made mixed and single flavored popsicles. For the mixed ones, I started by peach, then strawberry and finally blackberry. This also created a nice transition between the colors. My son’s favorite was strawberry, I was into peach and hubby liked the blackberry most. The cousins liked all the flavors equally.
After everybody decided on his favorite, the second day everyone picked up own favorite single flavored popsicle. As a peach addict of course I picked my homemade peach popsicle. Because I doubled the amount and I have only six popsicle molds at home, I used paper coffee carton cups. Actually they are easier to use. You don’t have to try hard to safely pick the popsicle off the mold. Just tear the cup carefully, and no molds to be washed. That was the best side of this recipe. If you want to do someone a favor, you can serve these berrylicious peach popsicles. They will love you more than ever.

Ingredients
- 2 cups peach, cut into small pieces
- 6 tbsp sugar (less sugar may be needed for sweeter peaches)
- 2 cups strawberry, leaves cut off
- 6 tbsp sugar
- 2 cups blackberry
- 150 ml milk
- 6 tbsp sugar
Instructions
- In a food processor mix all the ingredients of each layer separately until finely smooth
- Divide the mixture of one layer equally into coffee cups (for single flavored ones, fill the whole cup)
- Freeze 1 hour
- Add the second layer
- Freeze 1 hour minutes
- Add the last layer
- Insert the sticks
- Freeze at least 4 hours
