Chocolate Sour Cherry Meringue Parfaits

Refreshing, light and sweet! What else do you expect from a summer dessert? Chocolate sour cherry meringue parfaits will meet all your expectations.

When the temperature is above the average, you need an above the average refreshing dessert. Ice creams and popsicles are the most common refreshing sweets, but are filled up with fructose and white sugar. They may be sweeter than my recipe, but are unfortunately higher in calories. Using sour cherries in this recipe helps you to have contrasting but balanced aromas in your mouth with less calorie intake.

Sour cherries look almost the same as sweet cherries, but are only a little smaller, and not surprisingly are not sweet. They are usually consumed after sweetened or as the main ingredient of sour cherry jam. In this recipe sour cherries are the healthy and refreshing ingredient of your parfait.

Meringues are the other basic ingredient of your chocolate sour cherry meringue parfaits. This time I didn’t bake the meringues, I bought them from the bakery shop to gain some time, but actually they are very easy to make.

Mascarpone sauce lies between the sour cherries and the sweet meringue crumbles and acts as a bridge between the opposite tastes. Actually, mascarpone sauce is the key ingredient to have a very well balanced taste in this recipe.

And finally, the chocolate sauce on the meringue crumbles is topped with a few more sour cherries and mint leaves. That completes the final layer of the parfait. So we have sour cherries at the bottom and then meringue and mascarpone sauce, meringue the second time, chocolate sauce, sour cherries again and the mint leaves.

Ingredients

  • 600 gr (21 Oz/ or 3 ½ cup) fresh sour cherry
  • 2 Oz (1/4 cup) sugar
  • 4 Oz bitter chocolate
  • 300 gr (10 ½ Oz) Mascarpone
  • 2 ½ tbsp. powdered sugar
  • 2 tbsp. cherry juice
  • 3 Oz meringue, crumbled
  • mint leaves

Instructions

  1. Put the sour cherries in a large pot
  2. Add the sugar
  3. Cook until the sugar melts on medium heat stirring occasionally caring about the cherries (about 10 minutes), set aside to cool down
  4. Melt the bitter chocolate bain marie
  5. In a bowl, mix the mascarpone, powdered sugar and cherry juice until well combined
  6. Divide all the ingredients into 6 cups in the following order: sour cherry, meringue, mascarpone sauce, meringue, chocolate sauce, sour cherry and mint leaves
  7. Refrigerate at least 1 hour
  8. Serve cool
