Trying to persuade a picky eater not to skip lunch or dinner is a little bit tiring especially if he is under the weather. There are two ways to do it: either take him to the pizzeria on the corner or prepare something he likes. Actually it is difficult to make something for the kids both tasty and not sweet. But I came up with this creamy salami pasta salad recipe, it was tasty and did not have any sugar.
My little son had a fever yesterday and he didn’t want to eat anything. As a typical mother I suggested making chicken soup but of course he refused. Finally we agreed on this cold creamy pasta salad. It gave him some energy and filled his stomach and inspired me to make a similar pasta salad for the dinner.
The one for my son had some carrot, apple, beans and corn, the healthy stuff against his illness. For the one I prepared for dinner I thought some salami, pickles and corn would be great. And the magic touch came from chili this time. The contrast between the hot chili peppers and sweetness of corn created a great flavor.
At first I thought it would be a starter, but then it turned out to be the main course. Some refrigerating made it a cold and refreshing dinner for us. Especially my husband liked it a lot. The best thing is that, it is very easy to make. Boil and drain the pasta and mix with the other ingredients. That’s all.
This creamy salami pasta salad recipe makes a fresh and cooling lunch for the hot summer days, or it is a good idea to have a bowl of it for dinner to abstain eating a lot. Having some pasta salad in the fridge also solves the snack problem. You don’t have to look for something to eat when you suddenly feel hungry. Go get a bowl of pasta salad.

Ingredients
- 2 cups pasta
- 3/2 cup corn
- 1/2 cup salami
- 1/2 cup pickled cucumber, diced
- 1/2 tsp garlic, minced
- 1 tbsp hot chili, chopped
- 1 tbsp parsley
- 1/2 cup mayo
- 1/2 tsp salt
Instructions
- Cook the pasta according to package instructions
- Bring all the ingredients together in a large bowl
- Mix well with a spoon
- Refrigerate for 30 minutes before serving
