Mediterranean people spend a lot of time for breakfast, not only to prepare but also to eat. It may take up to an hour to lay the table with everything ready to eat. When it comes to have the breakfast, it may take even longer. It is not just a meal, but it’s a ceremony to get some energy, get ready for the day, and chat with family members. For me, it’s a source of happiness especially at the weekends.
But you can’t have a good breakfast with instant oatmeal, waffles drowned in artificial syrup, cheap sausages or tasteless fruit jelly. If you want to enjoy your breakfast, you should put some effort into it; and if you want it to be healthy and tasty, you should go some Mediterranean.
Cheese, olives, tomatoes, homemade jams, honey and eggs are crucial to have a Mediterranean style breakfast. They make really yummy breakfast, and they are undoubtedly healthy. The only problem about this type of breakfast is that it takes a lot of time to prepare. Eating is enjoyable, but carrying all the stuff back into the dishwasher becomes a torture.
We have such hectic lives that sometimes we don’t have time even to gulp a sandwich. So, how can we have a fast, yummy, healthy and torture-free breakfast? The answer lies in this “all in one breakfast” recipe. All you need is some 15 minutes, sweet bell peppers (whatever color you want), some cheese, a few olives, a little olive oil, and any spice you like. Egg stuffed bell peppers recipe is really fast and satisfying.

Ingredients
- 4 bell peppers
- 1 tomato(mid-size)
- 1/2 cup cheddar cheese
- 8 olives(black&green;)
- 4 small size eggs
- 4 tsp olive oil
- A pinch of salt
- A pinch of black pepper
Instructions
- Preheat the oven (350 F)
- Take out pulp and seeds of peppers
- Dice the tomato
- Grate the cheese
- Take out the seeds of olives and chop them
- Keep the peppers in the oven for 10 minutes or 5 minutes after you get the smell
- Fill the peppers with grated cheese, chopped tomato and olives
- Add one tsp olive oil into each pepper
- Cook for five minutes
- Take them out and break one small egg into each pepper
- Add salt and black pepper
- Cook 10 minutes
- Serve hot.
