Sometimes you buy or bake something and and are inspired to prepare a sauce for the food because the food doesn’t taste well enough alone. You think it needs a complement. This time the things changed a little bit. My husband brought a great chili sauce the other day and I thought I had to bake something for that sauce. Finally, I decided to make a gluten free recipe and made these gluten free quinoa chia bites.
Actually I was planning to make gluten free quinoa muffins or gluten free quinoa cookies nowadays, but I changed my mind after I tasted the sauce. It’s a really hot one. There is no recipe or ingredients list on the jar, but I think it’s made with chili peppers, tomatoes and salt. I thought it would make a great dip sauce for any kind of snack.
Making snacks is usually not very tiring, and this recipe is not an exception. Preparing the mixture takes almost no time, you only have to wait while it’s baked, that is a little bit boring. These gluten free quinoa chia bites look crispy but they have a relatively soft texture. The best thing I like about these bites is that you feel the seeds inside and on the bites.
While you bake these gluten free quinoa chia bites, there is something you have to consider: after you make the mixture, you should spread the mixture evenly over the tray. Cook the mixture for 20 minutes at 180C / 355F for 20 minutes and cut them into 4 pieces horizontally and vertically (so you will have 16 pieces). Then you should turn all the bites upside down for a better texture. So turn them over and bake for another five minutes.

Ingredients
- 1 ¼ cup 15 minute boiled quinoa ( you can get it by boiling less than 1/2 cup of dry quinoa)
- 4 tbsp chia seeds
- 1 egg
- 50 gr parmesan cheese
- 1 tbsp olive oil
- 1 tsp sesame seed
- 1 tsp nigella
- 1 tsp thyme
- 1 tsp seasoning mix
- 3 tsp sunflower seeds
- 3 tsp pumpkin seeds
- a pinch of black pepper
- a pinch of salt
Instructions
- In a bowl add 9 tbsp water (at room temperature) to 4 tbsp chia seeds
- Mix with a spoon until it has the form of jelly
- In another big bowl, beat one egg with a fork
- Add the boiled quinoa and chia seeds and grated parmesan
- Mix with a spoon
- Add olive oil, 1 tsp sesame seeds, nigella, thyme, sunflower seeds and pumpkin seeds, seasoning mix, and a pinch of black peeper and salt
- Mix with a spoon until well combined
- Spread over a parchment until very thin
- Top with 2 tsp pumpkin seeds and 2 tsp sunflower seeds
- Bake for 30 minutes at pre heated oven at 180 C/ 355 F
- Cut into 16 pieces and turn the pieces upside down
- Bake for 10 more minutes

Hi there Ellen, actually I didn’t prepare the mix, but I got the tastes of tomato, chilli peppers, and salt. Possibly it was made by processing the ingredients in a food processor and then boiling the mixture until it gets thick enough.
