- 1/8 cup olive oil
- ½ cup green pepper
- ½ cup yellow pepper
- ½ cup red pepper
- 2 eggs
- 2 tbsp ricotta cheese
- ½ tsp salt
- 1 tbsp corn flour
- ½ tsp dried basil
Instructions
- Heat the oil in a pan
- Add the peppers
- Fry for 5 minutes
- Drain extra oil
- In a separate bowl break the eggs
- Add salt, cheese, flour, and basil
- Mix with fried peppers
- Fry 2 minutes on each side
- Top with some grated parmesan
