Gluten Free Ricotta Pepper Omelet

Abstain processed food as much as you can. Stay away from sugar. No additives or preservatives recommended. Clean eating is highly appreciated. No soda, no syrup, no waffles, no beer, etc. … Jamie Oliver starts a campaign against fizzy drinks and sugar, Dr. Oz hardly ever recommends a recipe including sugar. Okay, I admit that I sometimes share unhealthy recipes, but there is no way out! I like, I cook, I eat, and I share sweets! But, I try to be a caring mother at the same time. Please don’t let your kids to eat up my unhealthy recipes (Should I delete all the recipes under desserts category?) I guess no, it’s your responsibility to pick up the right recipe for you. If you are planning to cook it for yourself, cook whatever you want, but if it is for the kids, abstain desserts. Trying this gluten free ricotta pepper omelet recipe would be a good idea for the kids actually.

Some pepper in different colors in an omelet is just like some different spices in an Indian dish. That’s a really good match. Actually, if you like the color of a food, possibly you will like its taste. I remember reading an article about the colors and the taste of the foods. “Liking the color possibly means liking the taste” it said. So, if you like the images, you can try the recipe.

I made it for the breakfast. No matter if you make it for the lunch or dinner, or as a snack to be served at any time of the day. If you love eggs, you will like this omelet recipe. It is cheap, easy to make, ideal for your kids and really healthy. This is a variation of my omelet with ricotta cheese recipes. You can try it with spinach, other greens or even fruits. But this gluten free ricotta pepper omelet recipe is worth trying especially for a weekend breakfast at home.

Ingredients

  • 1/8 cup olive oil
  • ½ cup green pepper
  • ½ cup yellow pepper
  • ½ cup red pepper
  • 2 eggs
  • 2 tbsp ricotta cheese
  • ½ tsp salt
  • 1 tbsp corn flour
  • ½ tsp dried basil

Instructions

  1. Heat the oil in a pan
  2. Add the peppers
  3. Fry for 5 minutes
  4. Drain extra oil
  5. In a separate bowl break the eggs
  6. Add salt, cheese, flour, and basil
  7. Mix with fried peppers
  8. Fry 2 minutes on each side
  9. Top with some grated parmesan
