Ingredients
- 7 Oz grated carrot
- 9 Oz cauliflower florets
- 3 eggs
- 1 cup gluten free bread crumbs
- 1 cup grated cheddar cheese
- 2 tsp seasoning mix you like
- ½ tsp garlic powder
- ¼ tsp salt
- 1 tbsp olive oil
Instructions
- Preheat oven to 375 F
- Place cauliflower florets inside a food processor
- Blend until finely chopped
- Add the carrot (press them with your hands to let some juice out)
- Go on blending until finely chopped
- Add eggs, breadcrumbs, seasoning mix, garlic powder, cheese, olive oil and salt to the mixture
- Process a few minutes until they’re all well combined
- Place veggie nuggets on a baking parchment using an ice cream scoop
- Gently press all the nuggets down with a fork so that they’re all same height
- Bake for 20-25 minutes until tops become golden
- Let them cool a little before serving
- Serve with any sauce and sides you like
