Marinated Chicken Breast with Caramelized Onion

Chicken is one of my favorites when I want to have a nice dinner. It is healthy, cheap, and easy to prepare. When it comes to how yum it is, actually I am in a dilemma about that. If you just boil and serve a piece of chicken breast alone, no it is not yummy. But if you marinate and serve it with some veggies, yes it is very yummy. This marinated chicken breast with caramelized onion recipe is in the second category.

Chicken breast is so dry and hard to swallow for me unless accompanied with some veggies. And without marinade, it tastes really dull. So I started by marinating the chicken so that it had enough time to rest and get all the flavors inside. Then I started grilling the veggies on a cast iron pan. I had pepper and zucchini, but of course you can grill your own favorites. I also had ready to eat boiled corn, which paired very well with the chicken.

Upon grilling all the veggies, I grilled the breasts for 5 minutes on each side. The pan was was already hot enough, so medium heat was enough for me, but each pan has a different characteristic, so it’s better for you to adjust the heat for your pan.

While the breasts were on the pan, it was time to chop the onions and start caramelizing them in another non-stick pan. It takes twenty minutes to get them ready. You will be surprised to see how much volume they lose in twenty minutes. And the last step is to finalize cooking the breasts in oven.

It may sound like a lot of things to do, but by following the right order you can serve your marinated chicken breast with caramelized onion in about 1 hour. After this 1 hour, you can reward yourself with your mouthwatering chicken and a bottle of ice cold beer. You can make it even better by a little honey mustard sauce.

Ingredients

    Chicken & vegetables
  • 2 Chicken breasts
  • 1 medium sized zucchini
  • 2 medium sized bell pepper
  • 1 tbsp olive oil
  • Caramelized Onion
  • 1 lb onion
  • 4 tbsp olive oil
  • 1 tbsp sugar
  • ¼ cup water
  • Marinade
  • 1 tbsp olive oil
  • 1 tbsp honey
  • ½ tbsp. soy sauce
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cumin
  • ½ tsp garlic powder
  • a pinch of ground nutmeg

Instructions

    Caramelized onion
  1. Heat the oil in a non-stick wok
  2. First halve, then slice the onions (not very thin)
  3. Stir onions on medium heat for 10 minutes
  4. Add the sugar, stir 10 more minutes (the last five minutes on low heat)
  5. Add ¼ cup water throughout the process ( I added half of the water 2 minutes before adding the sugar, and the rest at the 15th minute)
  6. Marinade
  7. Mix all the ingredients in a bowl
  8. Brush the marinade to chicken breasts
  9. Let the breasts rest for 30 minutes
  10. Chicken & Vegetables
  11. Brush the oil to sliced vegetables
  12. Put them on hot cast iron pan
  13. Grill on both sides until soft enough
  14. Pre heat oven at 350 F / 176 C
  15. Grill the chicken breasts on cast iron 5 minutes on each side (10 minutes in total)
  16. Put them on a parchment paper and cook for 15 minutes in the oven
  17. Serve with caramelized onion and the vegetables
