Spaghetti, penne, fettuccine, rigatoni, rotini, and so on… How many different types of pasta have you eaten so far? Which one is your favorite? I think they are equally delicious, but there are certain types which I like more with certain types of sauce. For example, avocado sauce and linguine make a great match for me. That’s what we cook at least once a month, and I want to share our number one mushroom avocado linguine recipe today.
The men at home are so picky about pasta. If the pasta is dry, under or over boiled, or doesn’t have a delicious sauce, they don’t eat it. I remember cooking creamy chicken avocado pasta a few months ago, and they didn’t eat it. The reason? They said it wasn’t soft enough though they knew I purposefully cooked it al dente! For me that’s not a very big problem but I don’t live alone! For a happy dinner, everyone in the family should like the dinner menu.
Deciding on making pasta is very easy for all of us, but deciding on the sauce may sometimes be very tiring. Mushroom avocado linguine recipe is very practical and so delicious. Quickly boil the pasta and make the sauce, serve hot, and slowly savor the the creamy avocado sauce and juicy mushrooms with a glass of white wine. You will love it.
And of course you can make your own adaptation for this recipe. For example, you can double the amount of mushroom or carrot. You can also prepare more avocado sauce, but don’t forget to add more olive oil, lemon juice and garlic if you use more than two avocados.

Ingredients
- 8 Oz linguine
- 2 avocados (ripe)
- ½ cup canned mushroom
- ½ cup grated carrot
- 3 tbsp olive oil
- 2 tbsp freshly squeezed lemon juice
- 2 cloves garlic
- 1 tsp ground red pepper
- 1 tsp salt
Instructions
- Peel the skin of avocados and get rid of the seeds
- Put avocado, lemon juice, 1 tbsp olive oil, garlic and salt in a blender
- Process until becomes creamy
- Boil the pasta according to package directions
- Sauté grated carrot in 2 tbsp olive oil for 5 minutes
- Remove the carrots from the saucepan
- Add the red pepper and mushrooms into the pan
- Sauté for 5 minutes
- In a large bowl, mix the pasta, sauce and mushrooms
- Ornate with carrots and some parmesan(if you like)
