No Crust Potato Pizza

Actually this is not a pizza recipe, but it looks so much like mini pizza bites that I had to call the recipe no crust potato pizza. They make a quick, delicious, and cheap snack for your family and guests.

I don’t know why, but I spent the whole night reading articles called “5 ways white flour is harmful to you” or “7 negative effects of refined flour” and so on. Then I decided to give up blogging:) Blogging without flour is really difficult, but after some brainstorming I concluded that it is possible. You just need to substitute flour with something else.

For this no crust potato pizza recipe, the actor was Mr. Potato! I thought it would be a good idea to use potato slices instead of the crust. I tried it, and it was delicious. Hubby and kiddy also liked it, and that was what I wanted. When baked, potato gives a similar feeling to the dough crust actually.

Unlike mashed potato pizza crust recipes, you don’t have to process the potato for this recipe, all you have to do is to slice them thin. Similarly, you need thin slices of zucchini, prosciutto, and pepperoni. Of course you can use more ingredients and cheese to have a higher pizza, but I think the ones I used were OK for me.

I think the best part of this recipe is the sauce I made. Yes, you can buy canned pizza sauce, but it won’t take more than 5 minutes to prepare your own. Healthier, cheaper, and 100 % more delicious. All you have to do is to mix the grated tomatoes, tomato paste, spices and some olive oil. That’s all.

If you want to make something different for snack hour, or your husband or wife is bored of eating the same chips with beer, it’s time to make a change. These no crust potato pizzas make great snacks especially for beer lovers. One more thing: It’s gluten free (please make sure your pepperoni doesn’t include gluten)!

Ingredients

    Sauce
  • ½ cup mashed tomato
  • ¼ cup tomato paste
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp sugar
  • ¼ tsp black pepper
  • ½ tsp dried basil
  • 1 tsp olive oil
  • Pizza
  • 2 large potatoes (mine were about 1 lb. each)
  • 1 big zucchini (mine was about 9 Oz)
  • 1 cup shredded mozzarella
  • ½ cup pepperoni slices
  • 10 slices of prosciutto
  • 1 red pepper
  • 1 tbsp olive oil

Instructions

    Sauce
  1. Mix all ingredients in a bowl until well combined
  2. Pizza
  3. Pre heat oven to 400 F
  4. Thinly slice potatoes (about ½ cm maximum)
  5. Brush with olive oil on the top
  6. Bake 15 minutes or until slightly browned on edges and surface
  7. Take out from the oven
  8. Brush the sauce on the slices
  9. Place the prosciutto on the sauce by tearing into pieces to fit the surface
  10. Above the prosciutto place zucchini slices and brush with the sauce
  11. Equally divide and put the mozzarella above the zucchini slices
  12. Top with pepperoni and pepper and finally brush with the sauce
  13. Bake for about 10 more minutes until cheese melts
