Chop the veggies and fruits, add some olive oil and sauce, your salad is ready! What’s easier than making a salad for your lunch or dinner? Definitely nothing. That was my case yesterday evening, and my red bean orange avocado salad was ready in less than 20 minutes.
After a few days of unhealthy eating, you can hear the voice of your body asking you to feed it with something healthy. A big bowl of salad makes you and your body really happy in that case. Something red, something green and something juicy: these ingredients make your salad yummy and healthy.
I usually make chicken avocado salad or sometimes avocado shrimp salad, but I wanted this to be a vegetarian recipe so there’s no meat or seafood in this recipe. Both originated in Mexico, red beans and avocado are very rich in nutritional content and are a great match for your salad!
Orange was another good choice for my salad. Actually, I would prefer this to be a blood orange avocado salad, but I didn’t want to go to the market to get some blood orange, all the ingredients were from my kitchen. Orange cubes, lemon juice and lemon slices gave a great feeling of freshness to the recipe.
We had this salad for dinner, and we’ll have it again soon. But you can make a bowl of red bean orange avocado salad and have it as a side dish, appetizer at the beginning of your dinner or lunch or as a lunch or dinner alone!
If you really want to eat something healthy and yummy, prepare this quick salad and drink only water. That will help you to feel the tastes of ingredients sometimes separately and sometimes as whole. Please do not hesitate to add any spice you like. Remember, this is your meal!

Ingredients
- 1 avocado (ripe)
- 1 cup red beans (boiled or canned)
- ¼ cup canned sweet corn
- ¼ cup sliced olives (black & green)
- ¼ cup chopped red pepper (or chili!)
- ¼ cup orange (diced)
- 1 tbsp. olive oil
- Salt to taste
Instructions
- Mix everything in a big bowl
- Add the olive oil and salt
