Rice and Meat Stuffed Zucchini

Who doesn’t like zucchini? No matter how you cook it, it makes your recipe a really good one. There are a lot of ways to cook it: you can fry or grill, you can use it in meat, chicken and pasta dishes, make a yummy zucchini soup. I also know some recipes using zucchini for desserts. But today I’m making rice and meat stuffed zucchini.

Zucchini is one of the healthiest veggies. Luckily it is very common in our kitchens and plays an important role to balance a diet that mainly consists of meat and chicken. Our digestive system requires vegetables like zucchini to function better.

The idea appeared when I saw these plump zucchinis at the grocer’s. They were so cute that I had to make something delicious using them. At first, I was thinking of making a vegetarian stuffed zucchini recipe, but then I changed my mind.

Some minced meat would be great together with the rice for filling. That made an already delicious meal even better. And it became a more balanced meal for my son. The freshness of parsley and dill I put in the filling gave it a great fresh touch. You can feel the spring in your mouth.

Although rice and meat stuffed zucchini looks like a difficult and tiring recipe, it isn’t. All you have to do is to mix all the ingredients in a big bowl, add the spices you like, fill the mixture inside the zucchini, that’s all! Then just place them in a pot and cook for about 45 minutes. Actually, the ones I bought were not completely ripe, so I cooked them for 50 minutes on low heat, but depending on how ripe your zucchinis are you may need to adjust the cooking time. The best thing would be to check it at the 35th minute and make your own decision.

Finally, I decorated the plate with some greek yoghurt, tomato sauce and parsley. That way it looked even more delicious, and yoghurt gave it a fresh touch.

Ingredients

  • 7 Oz minced meat
  • 6-7 plump zucchinis
  • ¼ cup chopped parsley
  • 1/8 cup chopped dill
  • ½ cup grated tomato
  • ¼ cup finely diced onion
  • 1/8 cup + 1 tbsp. rice
  • 1/8 cup olive oil (for the mixture)
  • 1 tbsp. olive oil (to use just before cooking)
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp. tomato paste (1 for mixture, 1 for the pot)
  • 1/8 cup water

Instructions

  1. Mix all the ingredients except for the zucchinis in a big bowl
  2. Remove the inner part of the zucchinis after cutting them on the top (see the pictures)
  3. Fill them inside the zucchinis and place in a pot
  4. Sprinkle some salt over them
  5. Pour the olive oil(1tbsp)
  6. Melt 1 tbsp. tomato in 1 cup hot water.
  7. Add it to the pot
  8. Cook for (about) 45 minutes
  9. Check how much pot liquor is inside at the 20th minute, if you feel necessary add some more water.
