No matter where you live or how old you are, regardless of whether you are a gourmet or a glutton or a millionaire or a broke, there is one thing I know about you for certain: You love pasta. I have never met a person who doesn’t like it. Even the simplest pasta recipe is very yummy, but if you make it richer by adding your favorite veggies or meat, it becomes a feast for you, just as zucchini mushroom pasta was for us.
If I am short of time, I usually make an easy pasta with a simple tomato sauce, but after my son started eating regular meals with us, I always spend a little more time and try to make my recipe richer in vitamin content by adding veggies or meat. You know, the kids always have an excuse not to eat healthy things. If you can’t have them eat those healthy stuff, include them into something they like. That’s the common trick among mothers.
Actually, the name of this recipe should have been zucchini mushroom tomato pasta because tomato paste gives it a very nice color and tomato flavor. For coloring and flavoring pasta, tomato and avocado are the best things you can use. And I think mushrooms make a perfect ingredient for pasta. I always remember the taste of my mushroom avocado linguine recipe. That is a great example of how well avocado and mushrooms match in a pasta recipe.
If you get all the ingredients ready (diced, measured, etc.), it is a good idea to start boiling the pasta and preparing the sauce at the same time because you will need some water from the pasta pot to add into the sauce. Grilling veggies for topping is not a must, but they give your dish a very tempting touch (they are not included in the ingredients). Ingredients
- ½ lb. pasta
- 1 cup zucchini, diced (about 6 Oz)
- 1 cup mushroom, chopped (about 4 Oz)
- 1 and 1/8 cup pepper, chopped (red and yellow, about 7 Oz)
- ¼ cup olive oil
- 4 Oz tomato paste
- 2 cloves garlic
- 1 tsp dried basil
- 1 tsp salt
Instructions
- Cook the pasta according to package instructions
- Heat olive oil in a large pan
- Add minced garlic
- After you get the smell of the garlic add the pepper
- Stir the peppers around the pan for 3 minutes (medium heat)
- Add the tomato paste, stir for 2 minutes
- Add zucchini, mushroom and dried basil, stir for 1 minute
- Occasionally add water from pasta to prevent sticking ( I added about 1/8 cup in total)
- Cook for 20 minutes on low-heat or until they get cooked enough for you
- Drain the pasta
- Add the pasta into your sauce pan
- Mix with the sauce and cook for a few more minutes
- Top with grilled veggies (a little olive oil on both sides and some salt before grilling make them better)
- Grate some parmesan if you like
