Cheese Stuffed Chicken Sandwich

A four course dinner or a well prepared huge sandwich, they are equally valuable to me. As long as it is rich in its ingredients, a sandwich makes a great lunch or dinner. I like to have a sandwich especially on busy days like the one I had today. The best thing was that, my husband made the sandwich and I ate it, but of course I couldn’t help taking its photos and asking my hubby for the recipe. Don’t worry, I’m going to share his cheese stuffed chicken sandwich recipe with you.

He says he improvised it but I’m sure he was inspired by a photo on Pinterest. No problem for me of course, because it was really delicious.  He knows I like cheesy stuffed chicken and cheese stuffed burger, so possibly he searched the net to make something I like. I love this man a lot, especially when he cooks for me.

Normally I don’t like chicken breast as I think it tastes rather dull, but marinating the breasts and filling it with cheese and some chili has made it really delicious. Whatever you do, chicken breasts have a dry texture, which sometimes make it difficult even to swallow. So it’s a good idea to have something wet with it or drink something. Luckily I had both: Caramelized purple onions and beer! They were great with cheese stuffed chicken sandwich.

However, the sandwich still needed a sauce or something for a more comfortable eating experience, so I put some honey mustard sauce in it. That’s my favorite sauce for chicken recipes. I like its sweet and hot taste, and it made my cheese stuffed chicken sandwich a real feast.

And the last touch was made by Mr. Lemon. I started squeezing some lemon over almost everything, I think it gives a freshness to everything it touches. It was good for my sandwich too. I enjoyed this sandwich recipe a lot, and I’m sure you will also like it.

Ingredients

    Caramelised onion
  • 1 lb onion
  • 3 tbsp olive oil
  • 1 tbsp sugar
  • Marinade
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • 1 tsp soy sauce
  • Chicken
  • 2 chicken breasts (about 1 lb)
  • 1 cup grated cheese (one that melts easily like mozzarella, gouda, etc.)
  • 1 red pepper or a few chili peppers (about 3 Oz)

Instructions

    Caramelized onion
  1. Heat the oil in a non-stick wok
  2. First halve, then slice the onions (not very thin)
  3. Stir onions on medium heat for 10 minutes
  4. Add the sugar, stir 10 more minutes (the last five minutes on low heat)
  5. Add ¼ cup water throughout the process ( I added half of the water 2 minutes before adding the sugar, and the rest at the 15th minute)
  6. Marinade
  7. Mix all the ingredients in a bowl
  8. Brush the marinade onto chicken breasts
  9. Let the breasts rest for 30 minutes
  10. Chicken
  11. Pre heat oven to 350 F
  12. Grill chicken for 20 minutes on all sides on a cast iron grill
  13. Make cuts where possible to place the cheese
  14. Put on parchment paper and place in the oven
  15. Cook for 10 -13 minutes until cheese melts
  16. Put the breast and caramelized onions in the sandwich bread
