Summer is my favorite season because it is the season of fresh corn. With its hot and sweet taste, chili and garlic flavored corn on the cob is the best way to grill fresh corn.
My grandfather was a farmer and every summer all the cousins used to meet in the grandparents’ farmhouse. There were seven of us who made those days a kind of festival! All the games we played and stories told are still so vivid to me and I miss those beautiful days a lot. It was corn time at least two times a day. If the first was boiled, the second used to be grilled or just the opposite! Grandpa had a huge cornfield, so it was the cheapest way to feed a lot of kids.
Every year, when the corn season comes, I remember my childhood and eating corn makes me feel as a child. Actually my favorite is boiled corn, but with this chili and garlic flavored corn on the cob recipe, I would like to share an unusual corn taste with you.
When I grill corn on the cob in oven, the smell coming out of the oven is so great, but why not make it greater? When finely chopped red hot chili peppers rest in olive oil with a few cloves of garlic, they become the ultimate topping for your grilled corn on the cob.
This recipe is not for children, but you can make the same sauce with red bell peppers for the kids. The flavor and color of pepper and garlic first infuses into olive oil, then all the flavors go into the corn. That’s really delicious.
I finely chopped the peppers and the cloves and then they were in olive oil for about an hour. This way, the oil got all the taste and I brushed some of the oil before grilling the corns. Finally, I squeezed some lemon and added some dill on the corncobs. This balanced the hot taste ad gave a refreshing flavor. The best pair for this chili and garlic flavored corn on the cob recipe is a glass of cold water. Don’t forget to make it ready because you will need it!

Ingredients
- 4 corns on the cob (medium sized)
- 1/3 cup olive oil
- 4 chili peppers (finely chopped)
- 4 cloves of garlic (cut into small pieces)
- 3-4 sprigs of parsle
- 1 lemon
- Salt to taste
Instructions
- Soak the pepper and garlic in olive oil for an hour
- When the color of the oil changes into slightly red, brush some oil onto the corncobs
- Grill in your oven on all sides (brush more oil as you turn them over)
- When the corns are ready, top with chili garlic sauce and chop a few sprigs of dill
- Add some salt and squeeze some lemon for a fresher taste
