Baking muffins may sound like a waste of time for most of us. Actually, I agree with this most of the time. “Why to bother to bake muffins? Just with a few bucks, I can get the sweetest muffins at the bakery on the corner. OK, they never share the recipe, but a few dollars always work.” I have the opposition at this point. Money always work but it never gives you the joy of baking and being praised by what you have just baked.

My son is a real sweets addict, but I gradually come to realize that what he likes is more than just eating sweets. He likes it more when the mom bakes and is not an ordinary taste. This Nutella stuffed cinnamon muffins recipe is one of those recipes. These easy Nutella muffins are so different from the ones you can get at the bakeries. They’re so fluffy that you have the feeling of eating a sponge as you chew them. Nutella filling inside gives a wet and scrumptious feeling.

Ingredients

    Muffin
  • 1 ½ cup flour (sifted)
  • ½ cup sugar
  • 1 egg (at room temperature)
  • ½ cup milk
  • 4.5 Oz butter
  • 9 Oz Nutella
  • 1 tbsp. baking powder
  • ½ tbsp. vanilla
  • ½ tbsp. ground cinnamon
  • Topping
  • 3 Oz butter
  • ¼ cup sugar
  • 1 tbsp cinnamon

Instructions

    Muffin
  1. Preheat oven to 355 F / 180 C
  2. In a large bowl, mix (with an electric mixer) the butter and sugar for about 3 minutes until it becomes creamy
  3. Ad the egg, milk, vanilla, baking powder and flour respectively
  4. Mix until well combined.
  5. Divide the mixture and Nutella into 6-8 muffin cups until the cups are 2/3 full (1/8 cup mixture +1/2 tbsp Nutella + 1/8 cup mixture + ½ tbsp Nutella + 1/8 cup mixture) You may need to make adjustments for different sizes of muffin cups.
  6. Bake for 15- 18 minutes until
  7. Remove and set aside for five minutes to cool down
  8. Topping
  9. Melt the butter
  10. Mix the sugar and cinnamon in a bowl
  11. Dip the muffins into butter and the sugar – cinnamon mixture
  12. Serve after totally cools down
