Strawberry Spring Salad

There are thousands of different combinations to make a salad. Usually the season is the determining factor of the ingredients in your salad. Today, I want to share a simple strawberry spring salad recipe with you.

Eventually it’s Spring again. The season of awakening of nature. Everywhere’s turning green. The colors and scent of blossoms remind you the joy of life. And we’re having more fruits in the market place: We’ve started with berries, and next comes the green almonds and green plums and so on… I’m so happy!

The freshness of the nature gives me a kind of energy and feeling of good health with an irresistible urge to make something green for the dinner. Cooking the greens sounds like killing the good stuff in veggies, so I always prefer to use them uncooked. And that’s why I preferred to make strawberry spring salad with the greens.

Strawberry spinach salad is one of my favorites, but this time I used some arugula, some dill and some parsley for my salad. Red and white touch of strawberries and goat cheese gave the salad a great flavor and a good combination of vitamins and protein. Different colors in a salad mean different minerals and vitamins.

My strawberry spring salad is not a surprise recipe for most of you, but the sauce I prepared gave it a magic touch making it sweet and sour which reminds you of the winter as you enjoy this spring recipe. Taste of orange and lemon gave me that kind of a feeling possibly because they’re both winter fruits.

Honey and mustard showed me how opposites attract each other. I think olive oil helped them to have a smoother togetherness. And the chia seeds gave the final touch. I’ve recently started using them for almost all the recipes I make. They act like sprinkles on the salad! If you want to have a fresh and healthy dinner, try my strawberry spring salad today. Strawberry spring salad. A fresh and delicious combination of spring greens and strawberry with a hint of citrus flavor.

Ingredients

    Dressing
  • 2 tbsp orange juice
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 ½ tbsp mustard
  • Salad
  • 2 cups arugula
  • 1 cup parsley
  • 1 cup dill
  • 1 cup strawberries (halved)
  • ½ cup goat cheese (diced)
  • ½ tsp chia seeds

Instructions

    Dressing
  1. Combine all the ingredients in a small bowl
  2. Salad
  3. Mix ingredients in a bowl
  4. Divide into two smaller bowls
  5. Add the dressing
  6. Top with chia seeds
